While the saying goes that breakfast is the most important meal of the day, this notion shouldn’t interfere with you creating a delicious lunch that will satisfy your taste buds and brighten your day. Below, we have created a simple recipe for a Caprese sandwich which will help you create a scrumptious meal within 10 minutes.

Ingredients:

  • Fresh mozzarella
  • 12 basil leaves
  • 2 tomatoes
  • A loaf of sourdough bread
  • A jar of red bell peppers
  • Basil pesto
  • Olive oil
  • Balsamic vinegar (optional ingredient)

Directions:

Take two pieces of sourdough bread. Coat one side of the sourdough bread with the basil pesto according to the amount you want. Proceed to cut ¼ inch pieces of mozzarella which you will lay on one piece of bread, about three pieces per sandwich. Move on to cutting the tomato slices which should be about the same width as the mozzarella. Place two to three pieces of tomato on top of the mozzarella and then place three basil leaves on top of the tomato. You can then add red peppers and balsamic vinegar, if you desire, to the sandwich on top of the basil. Put the other piece of bread on the layered ingredients and proceed to coat a pan with olive oil. Move the sandwiches to the cooking pan. Cook the sandwiches on medium heat until the bottom is golden brown and then flip to cook the other side. Cut the sandwich in half and enjoy!
